History
Restaurant Shalimar was started in 1990 by Mrs. Uma Nigam, with the assistance of her son Jyoti Nigam. Using knowledge gleaned from her upbringing in Northern India, Uma was the first to bring Indian cuisine to the Sherbrooke region.
In 1993, Jyoti left his employment at CHUS Sherbrooke to join Shalimar on a full-time basis. Reaping the benefits of a large vegetable garden at their family home in Canton-de-Hatley, and benefiting from Jyoti’s extensive experience with organic gardening, Shalimar has been able to and continues to introduce vegetables to its clients that are currently unavailable on the local market.
As the general awareness of South Asian cuisine has evolved, Shalimar has been able to diversify the menu and cater to individual tastes – in particular with regards to vegetarian and vegan cuisine. With the arrival of Lizy Carvalho from Mumbai in 1995, Shalimar has also been able to introduce authentic dishes from her native South Indian province of Kerala.
Over the years, Shalimar has been able to adapt and improve its cuisine according to the refining tastes of its clientele, particularly vegetarians and vegans.
